Whole cumin seeds have a savory, almost burnt taste and a sour, smoky scent. They have a crescent form and are brownish-yellow in hue. Cumin seeds contain ridges separated by oil-filled canals running down their lengths, much as other schizocarp (dry fruit) spices.

Crushed and gently toasted whole cumin on a dry pan gives a nuttier taste with hints of roasted meats and veggies. In fact, one of the most popular spices in vegetarian cooking is cumin, which mimics the taste of delicious meat. It may easily overshadow a meal, so use it carefully.
